Looking for an easy potato latke recipe and hack?! I have the best one for you!

Hint: it involves a staple Trader Joe’s item!

Last year, I started my annual latke making get together (albeit it really only came to be as a last minute gathering because a friend from Sweden was in town) but I really enjoyed making latkes for the first time and thought I’d make it a tradition!

This year, I am going to perfect the recipe and also share my easy potato latke recipe and hack, because, let’s be honest: I am not a fan of cooking in the kitchen for hours on end!

I actually encourage hacks in my day to day life — let’s enjoy life: not be working the whole time right?

In any case here is an easy potato latke recipe and hack:

• Buy the potatoes pre grated (i.e. the frozen hash browns Trader Joe’s work very well). Trust me: do yourself a favor and don’t spend time grating those potatoes yourself.
• Add egg, flour, salt, pepper and grated potatoes to a mixing bowl and mix well until it all is one mixture. (Add enough flour so the potatoes stick together.)
• Start frying! Create small circular flat shapes to fry (I like when the potato strands stick out on the sides and get crispy). Fry until brown and golden.
• Serve with sour cream and apple sauce on the side. Some people like both or just one or the other.

Ultimate hack: if you truly don’t have time to even mix up the potatoes and fry them: Trader Joe’s has very tasty frozen latkes ready to heat up, I bought some last year just in case mine were a fail.
