5 Easy Low Carb Meals
I love to indulge in so many kinds of foods from gourmet to fast food when I don’t feel up to cooking or just want to treat myself but when I do cook at home I like to make these 5 easy low carb meals.
1. Tik Tok’s Viral Feta Pasta (with a Twist)
Once this sensation hit the Tik Tok “for your” page: there was no turning back! People went crazy for it (and so did I!). However, I decided to make a low carb version and ditch the pasta for salmon. See entire recipe here!
2. Ground Turkey Taco Bowl
Skip Chipotle and make this easy and yummy taco bowl yourself! Get you favorite ground turkey, seasonings, shredded Mexican cheese, sour cream, guacamole, salsa, and assemble your own bowl. I added my own low carb chips with Mission low carb tortillas (the holy grail of low carb tortillas IMO). I made the chips in my new air fryer which made the process super simple! Use this serving bowl for the taco salad!
3. Stuffed Bell Peppers
An easy meal to make and use for meal preps. Hollow out your peppers, fill them with any kind of ground meat cooked and seasoned, then add shredded cheese and some goat cheese on top and place in the oven until the cheese is melted and golden brown!
4. Pesto Eggs
These are also a Tik Tok sensation! I actually baked my eggs instead of frying them but pesto tastes completely delicious with eggs. I would add them to an omelette too! Baking them is great for hosting — trying them for a Father’s Day brunch this year!
5. Low Carb Breakfast Pizza
Using the Mission low carb tortilla as a crust: top with tomato sauce, shredded cheese, avocado, slice bell peppers, and an egg and bake it all until melted and golden brown. You can add other proteins but if I am making it for breakfast I always use an egg.

Tik Tok’s Viral Breakfast Sandwich (Low Carb style):
I finally got these fantastic no stick pans (I know, why did it take so long!) and they are perfect for making Tik Tok’s breakfast sandwich hack. Instead of bread, I use my trusty low carb tortillas: after the eggs are scrambled, seasoned and in nearly cooked in the pan: I place the tortilla flat on top of the eggs and fold the tortilla and the eggs over — then get the tortilla toasty and both sides and there you go!
