Simple Dinner Recipes to Cook when you Live Alone

Living alone it can be difficult to cook for just one but these simple recipes will make cooking a cinch!
So I took a little walk up to Whole Foods. Side note: yes, I walked to Whole Foods, which was 20 blocks! And for people who don’t know me, I don’t like to walk: so that is a big deal for me. In any event, I took a stroll on a sunny and warm (ish) day to get some food for the week. Other side note: along with not liking to walk, I also don’t really cook much. I actually do enjoy cooking but just never really carve out the time for it, but tonight I thought: I’m going to throw on some One Direction (yes, I adore those sweet 20 something Brits) and cook!
When I do cook, I always try to keep it simple and easy, like those Rachael Ray 30 minute meals and when I am making dinner I make a protein (usually a meat) and a vegetable (for that complex carb action). So for tonight’s simple dinner recipe, for the cook who doesn’t want much fuss, I give you: meatballs and artichokes with lemon aioli.
Ingredients for Simple Dinner Recipe:
Whole Foods’ meatballs (these come rolled and fully prepared in the meat section and it’s a real time saver!), two whole artichokes, mayonnaise, lemon, salt, and garlic.
Boil the artichokes for about 40 minutes, then let them rest for another 20 or so, because they will be hot!
Put some olive oil in a skillet, add chopped garlic and let sizzle a bit. Note: don’t get distracted by One Direction singing and Snapchatting at the same time or garlic will burn ; )
Once hot, add the already rolled and prepared (heck ya!) meatballs and let them brown a bit on one side, then continue to monitor them and rotate them. Do this for about 30 minutes (depends on how rare you want them or not, I like them a little pink in the middle).
Mix mayo and lemon juice, add some pepper and salt. Taste test to your liking.
